Ingredients

  • one pint oysters.
  • two tablespoons butter.
  • salt.
  • pepper.
  • slices of toast.

Method

  1. Clean one pint oysters and drain from their liquor.
  2. Put in a stewpan and cook until oysters are plump and edges begin to curl.
  3. Shake pan to prevent oysters from adhering to pan, or stir with a fork.
  4. Season with salt, pepper, and two tablespoons butter, and pour over four small slices of toast.
  5. Garnish with toast points and parsley.
