Braised Chicken with Potatoes, Olives, and Lemon
A bright braised chicken dinner with olives, lemon, and tender potatoes.
Ingredients
- 1 1/2 lb bone-in chicken thighs
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup chicken broth
- 2 tbsp olive oil
- 1 lb baby potatoes, halved
- 1 onion, sliced
- 3 cloves garlic, smashed
- 1/2 cup green olives
- 1 lemon, sliced
- 2 tbsp chopped parsley
Method
- Season the chicken with salt and pepper.
- Brown the chicken in olive oil skin-side down until golden; transfer to a plate.
- Add the potatoes and onion to the pan and cook 5 minutes.
- Add the garlic, olives, lemon, and broth and return the chicken to the pan.
- Cover and braise in a 375°F oven for 30–35 minutes until the chicken and potatoes are tender.
- Finish with parsley and serve.
Notes
Uncover for the last 10 minutes if you want crisper chicken skin.
