Braised Chicken with Potatoes, Olives, and Lemon
A bright braised chicken dinner with olives, lemon, and tender potatoes.

bone-in chicken thighs 1 1/2 lb
kosher salt 1 tsp
black pepper 1/2 tsp
chicken broth 1 cup
olive oil 2 tbsp
baby potatoes, halved 1 lb
onion, sliced 1
garlic, smashed 3 cloves
green olives 1/2 cup
lemon, sliced 1
chopped parsley 2 tbsp
Method
1 Season the chicken with salt and pepper.
2 Brown the chicken in olive oil skin-side down until golden; transfer to a plate.
3 Add the potatoes and onion to the pan and cook 5 minutes.
4 Add the garlic, olives, lemon, and broth and return the chicken to the pan.
5 Cover and braise in a 375°F oven for 30–35 minutes until the chicken and potatoes are tender.
6 Finish with parsley and serve.

  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 1 onion, sliced
  • 3 cloves garlic, smashed
  • 1/2 cup green olives
  • 1 lemon, sliced
  • 2 tbsp chopped parsley

Method

  1. Season the chicken with salt and pepper.
  2. Brown the chicken in olive oil skin-side down until golden; transfer to a plate.

  4. Add the garlic, olives, lemon, and broth and return the chicken to the pan.
  5. Cover and braise in a 375°F oven for 30–35 minutes until the chicken and potatoes are tender.

Notes

Uncover for the last 10 minutes if you want crisper chicken skin.
