Carrot-Potato Gnocchi
Tender homemade gnocchi with carrots folded into the dough for sweetness and color.

russet potatoes 1 lb
carrots 8 oz
olive oil 2 tbsp
egg yolk 1
all-purpose flour, plus more as needed 1 cup
kosher salt 1 tsp
butter 2 tbsp
chopped sage or parsley 2 tbsp
Method
1 Boil the potatoes and carrots until very tender, then drain well.
2 Pass them through a ricer or mash until smooth and let cool slightly.
3 Mix in the egg yolk, salt, and enough flour to form a soft, workable dough.
4 Roll into ropes, cut gnocchi, and dust lightly with flour.
5 Boil until they float, then cook 1 minute more and drain.
6 Brown the gnocchi in butter and olive oil and finish with herbs.

  • 2 tbsp butter

Method

Notes

Do not add too much flour or the gnocchi will turn dense.
