Carrot-Potato Gnocchi
Tender homemade gnocchi with carrots folded into the dough for sweetness and color.
Ingredients
- 1 lb russet potatoes
- 8 oz carrots
- 2 tbsp olive oil
- 1 egg yolk
- 1 cup all-purpose flour, plus more as needed
- 1 tsp kosher salt
- 2 tbsp butter
- 2 tbsp chopped sage or parsley
Method
- Boil the potatoes and carrots until very tender, then drain well.
- Pass them through a ricer or mash until smooth and let cool slightly.
- Mix in the egg yolk, salt, and enough flour to form a soft, workable dough.
- Roll into ropes, cut gnocchi, and dust lightly with flour.
- Boil until they float, then cook 1 minute more and drain.
- Brown the gnocchi in butter and olive oil and finish with herbs.
Notes
Do not add too much flour or the gnocchi will turn dense.
