Chicken Milanese
A crisp, thin chicken cutlet dinner finished with peppery greens.

chicken cutlets 4
kosher salt 1 tsp
black pepper 1/2 tsp
all-purpose flour 1/2 cup
panko breadcrumbs 1 1/2 cups
grated Parmesan 1/3 cup
olive oil for shallow frying
arugula 2 cups
lemon juice 1 tbsp
eggs, beaten 2
Method
1 Season the chicken with salt and pepper.
2 Dredge in flour, then egg, then breadcrumbs mixed with Parmesan.
3 Shallow-fry in olive oil until golden and cooked through, 3–4 minutes per side.
4 Toss the arugula with lemon juice.
5 Top each cutlet with a little arugula and serve.

  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour
  • 1 1/2 cups panko breadcrumbs
  • 1/3 cup grated Parmesan
  • for shallow frying olive oil
  • 2 cups arugula
  • 1 tbsp lemon juice
  • 2 eggs, beaten

Method

  1. Season the chicken with salt and pepper.
  2. Dredge in flour, then egg, then breadcrumbs mixed with Parmesan.
  3. Shallow-fry in olive oil until golden and cooked through, 3–4 minutes per side.
  4. Toss the arugula with lemon juice.
  5. Top each cutlet with a little arugula and serve.

Notes

Pound the cutlets evenly so they cook at the same rate.
