Country Fried Steak
A crispy, nostalgic Southern steak dinner with peppery pan gravy.

kosher salt 1 tsp
black pepper 1/2 tsp
all-purpose flour 1 1/2 cups
paprika 1 tsp
garlic powder 1/2 tsp
eggs 2
milk 1/2 cup
reserved seasoned flour 2 tbsp
milk, for gravy 2 cups
neutral oil for frying
butter 2 tbsp
Method
1 Season the steak with salt and pepper.
2 Whisk the flour, paprika, and garlic powder in a shallow dish. Whisk the eggs with 1/2 cup milk in another dish.
3 Dredge the steak in the flour, then the egg mixture, then the flour again.
4 Fry in 1/4 inch of hot oil over medium heat until deeply golden and cooked through, about 3–4 minutes per side. Transfer to a rack.
5 Pour off all but 2 tablespoons of fat. Melt the butter, whisk in the reserved seasoned flour, and cook 1 minute.
6 Whisk in the 2 cups milk and simmer until thickened. Season to taste and serve over the steaks.

Notes

Keep the fried steaks on a rack so the coating stays crisp.
