Country Fried Steak
A crispy, nostalgic Southern steak dinner with peppery pan gravy.
Ingredients
- 1 1/2 lb cube steak
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 cups all-purpose flour
- 1 tsp paprika
- 1/2 tsp garlic powder
- 2 eggs
- 1/2 cup milk
- 2 tbsp reserved seasoned flour
- 2 cups milk, for gravy
- for frying neutral oil
- 2 tbsp butter
Method
- Season the steak with salt and pepper.
- Whisk the flour, paprika, and garlic powder in a shallow dish. Whisk the eggs with 1/2 cup milk in another dish.
- Dredge the steak in the flour, then the egg mixture, then the flour again.
- Fry in 1/4 inch of hot oil over medium heat until deeply golden and cooked through, about 3–4 minutes per side. Transfer to a rack.
- Pour off all but 2 tablespoons of fat. Melt the butter, whisk in the reserved seasoned flour, and cook 1 minute.
- Whisk in the 2 cups milk and simmer until thickened. Season to taste and serve over the steaks.
Notes
Keep the fried steaks on a rack so the coating stays crisp.
