Greek Sheet Pan Salmon and Asparagus
A clean, spring-ready salmon dinner with bright Greek flavors.
Ingredients
- 1 1/2 lb salmon fillet
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 lemon, sliced
- 1/3 cup crumbled feta
- 2 tbsp chopped dill or parsley
Method
- Heat the oven to 425°F and line a sheet pan.
- Place the salmon in the center and the asparagus around it.
- Drizzle with olive oil and season with oregano, salt, and pepper.
- Top with lemon slices.
- Roast 12–18 minutes until the salmon flakes and the asparagus is tender.
- Finish with feta and herbs.
Notes
Thin asparagus will cook faster than thick spears, so watch closely.
