Green Goddess Sandwich
A crunchy, herb-forward sandwich that tastes like spring.
Ingredients
- 3 tbsp mayonnaise
- 2 tbsp Greek yogurt or sour cream
- 1 tbsp lemon juice
- 2 tbsp chopped parsley or basil
- 1 tbsp chopped chives or scallions
- 1 small clove garlic, grated
- pinch salt
- to taste black pepper
- 4 slices good sandwich bread, toasted
- 1 cup shredded romaine
- 1 cup thinly sliced cucumber
- 1/2 avocado, sliced
- 4 oz turkey or sliced chicken
- 4 slices provolone or mozzarella
Method
- Whisk the mayonnaise, yogurt, lemon juice, parsley or basil, chives or scallions, garlic, salt, and black pepper to make the green goddess dressing.
- Spread the dressing on both sides of the toasted bread.
- Pile the romaine, cucumber, avocado, turkey, and cheese onto two slices.
- Close the sandwiches and press gently.
- Slice and serve immediately.

This version includes a quick homemade green goddess dressing so the sandwich is fully self-contained.
