Irish Cream Loaf Cake
A tender loaf cake with Irish cream flavor and scattered chocolate chips.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1/2 cup irish cream liqueur
- 1/4 cup milk
- 1 tsp vanilla extract
- 3/4 cup mini chocolate chips
Method
- Heat the oven to 350°F and grease a loaf pan.
- Whisk the flour, baking powder, and salt.
- Cream the butter and sugar until fluffy, then beat in the eggs one at a time.
- Mix the Irish cream, milk, and vanilla together.
- Alternate adding the dry ingredients and Irish cream mixture to the batter. Fold in the chocolate chips.
- Bake 50–55 minutes until a toothpick comes out clean. Cool before slicing.
Notes
A simple glaze of powdered sugar and Irish cream is great on top.
