No-Bake Lemon Bars
A bright, creamy lemon dessert with a buttery cookie crust and zero oven time.
Ingredients
- 2 cups shortbread cookies, finely crushed
- 6 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 cup whipped topping
- 2 tbsp powdered sugar, for dusting
Method
- Line an 8x8-inch pan with parchment.
- Stir the crushed cookies with melted butter and press firmly into the pan. Chill 10 minutes.
- Beat the cream cheese until smooth, then beat in the sweetened condensed milk, lemon juice, and lemon zest.
- Fold in the whipped topping until evenly combined.
- Spread the filling over the chilled crust and refrigerate at least 4 hours, until firm.
- Dust with powdered sugar and slice into bars.
Notes
Chill overnight for the cleanest slices.
