One-Pot Creamy Cabbage Pasta
A silky one-pot pasta that turns humble cabbage into comfort food.

olive oil 2 tbsp
small onion, thinly sliced 1
garlic, minced 3 cloves
green cabbage, thinly sliced 4 cups
short pasta 12 oz
chicken or vegetable broth 4 cups
kosher salt 1 tsp
black pepper to taste
heavy cream 1/2 cup
grated Parmesan 1/2 cup
Method
1 Heat the olive oil in a Dutch oven. Cook the onion 4 minutes, then add the garlic.
2 Add the cabbage and cook 5–6 minutes until wilted.
3 Add the pasta, broth, salt, and pepper and bring to a simmer.
4 Cook, stirring often, until the pasta is tender and most of the liquid is absorbed, 10–12 minutes.
5 Stir in the cream and Parmesan and simmer 1 minute more.
6 Serve hot.

  • 2 tbsp olive oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, thinly sliced
  • 12 oz short pasta
  • 4 cups chicken or vegetable broth
  • 1 tsp kosher salt
  • to taste black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan

Method

  1. Heat the olive oil in a Dutch oven. Cook the onion 4 minutes, then add the garlic.
  2. Add the cabbage and cook 5–6 minutes until wilted.
  3. Add the pasta, broth, salt, and pepper and bring to a simmer.

  5. Stir in the cream and Parmesan and simmer 1 minute more.

Notes

A little crushed red pepper is great here if you want some heat.
