One-Pot Creamy Cabbage Pasta
A silky one-pot pasta that turns humble cabbage into comfort food.
Ingredients
- 2 tbsp olive oil
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 4 cups green cabbage, thinly sliced
- 12 oz short pasta
- 4 cups chicken or vegetable broth
- 1 tsp kosher salt
- to taste black pepper
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan
Method
- Heat the olive oil in a Dutch oven. Cook the onion 4 minutes, then add the garlic.
- Add the cabbage and cook 5–6 minutes until wilted.
- Add the pasta, broth, salt, and pepper and bring to a simmer.
- Cook, stirring often, until the pasta is tender and most of the liquid is absorbed, 10–12 minutes.
- Stir in the cream and Parmesan and simmer 1 minute more.
- Serve hot.
Notes
A little crushed red pepper is great here if you want some heat.
