One-Pot Lemon Garlic Shrimp Orzo
A glossy one-pot shrimp dinner with bright lemon and tender orzo.
Ingredients
- 1 tbsp olive oil
- 1 lb shrimp, peeled
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 3 cloves garlic, minced
- 3 cups broth
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 2 tbsp butter
- 2 tbsp chopped parsley
- 1 1/2 cups orzo
Method
- Heat the olive oil and cook the shrimp with salt and pepper just until pink; transfer to a plate.
- In the same pot, cook the garlic 30 seconds and stir in the orzo.
- Add the broth and simmer, stirring often, until the orzo is tender and creamy, 10–12 minutes.
- Stir in the lemon zest, lemon juice, and butter.
- Return the shrimp and parsley and toss to combine.
- Serve immediately.
Notes
Add a splash more broth at the end if the orzo tightens too much.
