One-Pot Lemon Garlic Shrimp Orzo
A glossy one-pot shrimp dinner with bright lemon and tender orzo.

olive oil 1 tbsp
shrimp, peeled 1 lb
kosher salt 1/2 tsp
black pepper 1/2 tsp
garlic, minced 3 cloves
broth 3 cups
lemon zest 1 tbsp
lemon juice 2 tbsp
butter 2 tbsp
chopped parsley 2 tbsp
orzo 1 1/2 cups
Method
1 Heat the olive oil and cook the shrimp with salt and pepper just until pink; transfer to a plate.
2 In the same pot, cook the garlic 30 seconds and stir in the orzo.
3 Add the broth and simmer, stirring often, until the orzo is tender and creamy, 10–12 minutes.
4 Stir in the lemon zest, lemon juice, and butter.
5 Return the shrimp and parsley and toss to combine.
6 Serve immediately.

  • 1 lb shrimp, peeled
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced

  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp butter
  • 2 tbsp chopped parsley
  • 1 1/2 cups orzo

Method

Notes

Add a splash more broth at the end if the orzo tightens too much.
