Palak Paneer
A creamy spinach and paneer curry that feels restaurant-style but is straightforward to make.

paneer, cubed 10 oz
ghee or oil 1 tbsp
onion, diced 1
garlic 3 cloves
grated ginger 1 tbsp
ground cumin 1 tsp
garam masala 1 tsp
turmeric 1/4 tsp
spinach 1 lb
cream 1/2 cup
kosher salt 1 tsp
Method
1 Brown the paneer in a little ghee or oil and set aside.
2 Cook the onion until soft, then add the garlic, ginger, cumin, garam masala, and turmeric.
3 Add the spinach and cook until wilted.
4 Blend the spinach mixture until smooth, then return it to the pan.
5 Stir in the cream and salt.
6 Add the paneer back and simmer 2–3 minutes before serving.

  • 10 oz paneer, cubed

  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/4 tsp turmeric
  • 1 lb spinach
  • 1/2 cup cream
  • 1 tsp kosher salt

Method

  1. Brown the paneer in a little ghee or oil and set aside.
  2. Cook the onion until soft, then add the garlic, ginger, cumin, garam masala, and turmeric.
  3. Add the spinach and cook until wilted.
  4. Blend the spinach mixture until smooth, then return it to the pan.
  5. Stir in the cream and salt.
  6. Add the paneer back and simmer 2–3 minutes before serving.

Notes

If the spinach mixture is very thick after blending, thin it with a splash of water.
