White Chicken Chili Enchilada Casserole
A layered casserole that turns white chicken chili into cheesy enchilada-style comfort food.
Ingredients
- 2 cups cooked shredded chicken
- 2 cups white chicken chili
- 8 corn tortillas
- 1 (4 oz) can diced green chiles
- 1/4 cup chopped cilantro
- 2 cups shredded Monterey Jack or cheddar
Method
- Heat the oven to 375°F.
- Spread a thin layer of white chicken chili in a baking dish.
- Layer tortillas, chicken, green chiles, cheese, and more chili.
- Repeat the layers, finishing with chili and cheese on top.
- Bake 25–30 minutes until bubbling.
- Rest 10 minutes and finish with cilantro.
Notes
If your chili is very thick, thin it with a splash of broth before layering.
