White Chicken Chili Enchilada Casserole
A layered casserole that turns white chicken chili into cheesy enchilada-style comfort food.

cooked shredded chicken 2 cups
white chicken chili 2 cups
corn tortillas 8
diced green chiles 1 (4 oz) can
chopped cilantro 1/4 cup
shredded Monterey Jack or cheddar 2 cups
Method
1 Heat the oven to 375°F.
2 Spread a thin layer of white chicken chili in a baking dish.
3 Layer tortillas, chicken, green chiles, cheese, and more chili.
4 Repeat the layers, finishing with chili and cheese on top.
5 Bake 25–30 minutes until bubbling.
6 Rest 10 minutes and finish with cilantro.

Notes

If your chili is very thick, thin it with a splash of broth before layering.
