Za'atar Chicken Bowls
A bowl-style lunch or dinner with warm za'atar chicken and cool toppings.
Ingredients
- 1 1/2 lb chicken thighs, sliced
- 2 tbsp olive oil
- 1 tbsp za'atar
- 1 tsp kosher salt
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 2 cups cooked rice or couscous
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup hummus
Method
- Toss the chicken with 1 tablespoon olive oil, za'atar, and salt.
- Cook the chicken in a skillet until browned and cooked through.
- Stir the remaining olive oil and lemon juice into the yogurt.
- Divide the rice or couscous into bowls.
- Top with chicken, cucumber, tomatoes, hummus, and yogurt sauce.
- Serve immediately.
Notes
This is very meal-prep friendly if you keep the yogurt separate.
