Za'atar Chicken Bowls
A bowl-style lunch or dinner with warm za'atar chicken and cool toppings.

Ingredients

chicken thighs, sliced 1 1/2 lb
olive oil 2 tbsp
za'atar 1 tbsp
kosher salt 1 tsp
Greek yogurt 1/2 cup
lemon juice 1 tbsp
cooked rice or couscous 2 cups
chopped cucumber 1 cup
cherry tomatoes, halved 1 cup
hummus 1/2 cup
Method
1 Toss the chicken with 1 tablespoon olive oil, za'atar, and salt.
2 Cook the chicken in a skillet until browned and cooked through.
3 Stir the remaining olive oil and lemon juice into the yogurt.
4 Divide the rice or couscous into bowls.
5 Top with chicken, cucumber, tomatoes, hummus, and yogurt sauce.
6 Serve immediately.

  • 1 tsp kosher salt
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 2 cups cooked rice or couscous
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup hummus

Method

  1. Toss the chicken with 1 tablespoon olive oil, za'atar, and salt.
