Breakfast Burritos (Chorizo)
To freeze: wrap tightly in foil and reheat in the microwave until hot.
Ingredients
- 4 large tortillas
- 6 eggs
- 1 tbsp butter
- 8 oz chorizo, cooked
- 1 cup shredded cheese
- to taste Salt and pepper
- to taste Cilantro
Method
- Warm tortillas so they fold easily.
- Cook filling(s) and eggs; season to taste.
- Pile fillings in the center of each tortilla; add cheese/salsa.
- Fold sides in and roll tightly. Toast seam-side down in a skillet if desired.
- Cook chorizo; scramble eggs; assemble with cheese and cilantro.
