Breakfast Burritos (Freezer-Friendly)
To freeze: wrap tightly in foil and reheat in the microwave until hot.

large tortillas 6
eggs 10
butter 2 tbsp
cooked breakfast potatoes 2 cups
shredded cheese 1 1/2 cups
Salt and pepper to taste
Method
1 WARMWarm tortillas so they fold easily.
2 COOKCook filling(s) and eggs; season to taste.
3 PILEPile fillings in the center of each tortilla; add cheese/salsa.
4 FOLDFold sides in and roll tightly. Toast seam-side down in a skillet if desired.
5 SCRAMBLEScramble eggs; combine with potatoes and cheese; roll burritos; wrap tightly and freeze.
