Breakfast Burritos (Freezer-Friendly)
To freeze: wrap tightly in foil and reheat in the microwave until hot.
Ingredients
- 6 large tortillas
- 10 eggs
- 2 tbsp butter
- 2 cups cooked breakfast potatoes
- 1 1/2 cups shredded cheese
- to taste Salt and pepper
Method
- Warm tortillas so they fold easily.
- Cook filling(s) and eggs; season to taste.
- Pile fillings in the center of each tortilla; add cheese/salsa.
- Fold sides in and roll tightly. Toast seam-side down in a skillet if desired.
- Scramble eggs; combine with potatoes and cheese; roll burritos; wrap tightly and freeze.
