Breakfast Burritos (Veggie)
To freeze: wrap tightly in foil and reheat in the microwave until hot.

large tortillas 4
eggs 6
butter 1 tbsp
diced bell pepper 1 cup
diced onion 1/2 cup
spinach 1 cup
shredded cheese 1 cup
Salt and pepper to taste
Salsa to taste
Method
1 WARMWarm tortillas so they fold easily.
2 COOKCook filling(s) and eggs; season to taste.
3 PILEPile fillings in the center of each tortilla; add cheese/salsa.
4 FOLDFold sides in and roll tightly. Toast seam-side down in a skillet if desired.
5 SAUTÉSauté pepper and onion; wilt spinach; scramble eggs; assemble with cheese and salsa.
