Broccoli Cheddar Soup (With Rice)
Soups taste better the next day—cool quickly and refrigerate.
Ingredients
- 3 tbsp butter
- 1 onion, diced
- 3 tbsp flour
- 3 cups milk
- 2 cups broth
- 4 cups chopped broccoli
- 2 cups shredded cheddar
- 1 tsp salt
- to taste Black pepper
- 1 cup cooked rice
Method
- Sauté onion in butter 5 minutes; whisk in flour 1 minute.
- Whisk in milk and broth; simmer until thickened, 5 minutes.
- Add broccoli; simmer 8–10 minutes until tender.
- Stir in cooked rice before serving.
- Off heat, stir in cheddar; season.
