Broccoli Cheddar Soup (With Spinach)

chopped broccoli 4 cups
shredded cheddar 2 cups

Method
1 SAUTÉSauté onion in butter 5 minutes; whisk in flour 1 minute.
2 WHISKWhisk in milk and broth; simmer until thickened, 5 minutes.
3 ADDAdd broccoli; simmer 8–10 minutes until tender.
4 STIRStir spinach in at the end to wilt.
5 OFFOff heat, stir in cheddar; season.
