Chicken and Rice Soup
A delicious chicken and rice soup recipe
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked shredded chicken
- 3/4 cup rice
- 1 tsp salt
- to taste Black pepper
- 2 tbsp parsley
- 1 tbsp lemon juice (optional)
Method
- Sauté onion, carrots, and celery in olive oil 8 minutes; add garlic 30 seconds.
- Add broth and rice; simmer 15 minutes until rice is tender.
- Stir in chicken; heat 5 minutes.
- Season; finish with parsley and lemon if using.
