Chicken Salad (Cottage Cheese Swap)
Taste and adjust salt/acid right before serving.
Ingredients
- 2 cups cooked shredded chicken
- 1/2 cup cottage cheese (blend for smooth texture if desired)
- 2 tbsp mayonnaise (optional)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 cup diced celery
- 2 tbsp diced red onion
- 1/4 tsp salt
- to taste Black pepper
- to taste Fresh dill or parsley
Method
- Stir cottage cheese, mayo (if using), Dijon, lemon, salt, and pepper.
- Fold in chicken, celery, onion, and herbs.
- Chill 15 minutes; serve in sandwiches or on greens.
