Chicken Tortilla Soup
A delicious chicken tortilla soup recipe
Ingredients
- 1 tbsp oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 can / (28 oz) crushed tomatoes
- 6 cups chicken broth
- 2 cups shredded chicken
- 1 can / (15 oz) black beans, drained (optional)
- 1 cup corn (optional)
- 1 tsp salt
- to taste Lime and cilantro
- to taste Tortilla strips and shredded cheese for serving
Method
- Sauté onion in oil 6 minutes; add garlic and spices 30 seconds.
- Add tomatoes and broth; simmer 20 minutes.
- Add chicken, beans, and corn; heat through 5 minutes; season.
- Serve with tortilla strips, cheese, lime, and cilantro.
