Herbed Quinoa Salad
A delicious herbed quinoa salad recipe
Ingredients
- 2 cups cooked quinoa, cooled
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped parsley
- 1/4 cup chopped mint (optional)
- to taste Dressing: 3 tbsp olive oil + 2 tbsp lemon juice + 1 tsp Dijon + 1/2 tsp salt + pepper
Method
- Combine quinoa and vegetables in a bowl.
- Whisk dressing ingredients.
- Toss salad with dressing and chill 15 minutes before serving.
