chickpeas, drained and rinsed 2 cans / (15 oz)
diced cucumber 1 cup
cherry tomatoes, halved 1 cup
diced red onion 1/2 cup
chopped parsley 1/2 cup
feta (optional) 4 oz
Dressing: 3 tbsp olive oil + 2 tbsp lemon juice + 1 tbsp red wine vinegar + 1 tsp oregano + 1/2 tsp salt to taste
Method
1 COMBINECombine chickpeas and vegetables in a bowl.
2 WHISKWhisk dressing and pour over salad.
3 TOSSToss well; chill 15 minutes for best flavor.
