Mushroom Wild Rice Soup
A delicious mushroom wild rice soup recipe
Ingredients
- 2 tbsp butter
- 1 onion, diced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 tsp thyme
- 8 cups broth
- 1 cup wild rice blend
- 1 tsp salt
- to taste Black pepper
- 1/2 cup cream (optional)
Method
- Sauté onion and mushrooms in butter 8 minutes; add garlic and thyme 30 seconds.
- Add broth and wild rice; simmer 35–40 minutes until rice is tender.
- Season; stir in cream if using and heat through.
