Pumpkin Overnight Oats

rolled oats 1/2 cup
milk (dairy or non-dairy) 3/4 cup
Greek yogurt (optional but recommended) 1/3 cup
chia seeds 1 tbsp
maple syrup or honey 1–2 tsp
vanilla extract 1/2 tsp
salt Pinch
pumpkin puree 1/3 cup
pumpkin spice 1/2 tsp
Method
1 STIRStir oats, milk, yogurt, chia, sweetener, vanilla, and salt in a jar.
2 COVERCover and refrigerate at least 4 hours (overnight is best).
3 INIn the morning, stir and add a splash of milk if too thick.
4 TOPTop with your favorite fruit or nuts and serve.
5 STIRStir pumpkin and spice into the jar before chilling.
