Pumpkin Spice Chia Pudding
If it thickens too much, add a splash of milk and stir.
Ingredients
- 2 tbsp chia seeds
- 1 cup milk (dairy or non-dairy)
- 1–2 tbsp maple syrup or honey
- 1/2 tsp vanilla extract
- Pinch salt
- 1/3 cup pumpkin puree
- 1/2 tsp pumpkin spice
Method
- Whisk milk, sweetener, vanilla, and salt in a bowl or jar.
- Stir in chia seeds. Wait 5 minutes, then whisk again to prevent clumps.
- Cover and refrigerate at least 2 hours (overnight is best).
- Serve with fruit, nuts, or granola.
- Whisk pumpkin puree and pumpkin spice into the milk before adding chia.
