Sesame Soba Noodle Salad
Rinsing soba cools them quickly and removes excess starch.
Ingredients
- 10 oz soba noodles
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 2 scallions, sliced
- to taste Dressing: 2 tbsp soy sauce + 2 tbsp rice vinegar + 1 tbsp sesame oil + 1 tbsp honey + 1 tsp grated ginger
- to taste Sesame seeds
Method
- Cook soba noodles; rinse under cold water and drain well.
- Whisk dressing ingredients.
- Toss noodles with carrots, cucumber, scallions, and dressing.
- Top with sesame seeds and serve.
