Shrimp Rice Bowl (Lemon Tahini)

cooked shrimp 1 lb
cucumber 1 cup
edamame 1 cup
shredded carrots 1 cup
Nori strips (optional) to taste
tahini 1/3 cup
lemon juice 2 tbsp
garlic 1 clove
salt 1/2 tsp
water 2–4 tbsp
Salt and pepper to taste to taste
Lemon or lime wedges (optional) to taste
Method
1 PREPAREPrepare cooked grain and protein (use leftovers for speed).
2 CHOPChop vegetables and add to a bowl with greens if using.
3 WHISKWhisk tahini dressing until smooth and pourable.
4 ASSEMBLEAssemble bowls: add grain, protein, and vegetables.
5 DRIZZLEDrizzle with dressing/sauce; season to taste.
6 SERVEServe immediately or meal prep (store dressing separately).
