Thai Coconut Curry Soup
A delicious thai coconut curry soup recipe
Ingredients
- 1 tbsp oil
- 2 tbsp red curry paste
- 1 can coconut milk
- 3 cups broth
- 1 tbsp fish sauce (or soy)
- 1 tsp sugar
- 2 cups mixed veggies
- 8 oz shrimp or tofu
- to taste Lime and cilantro
Method
- Fry curry paste in oil 1 minute.
- Add coconut milk and broth; simmer 5 minutes.
- Add veggies and shrimp/tofu; simmer until cooked.
- Season with fish sauce and sugar; finish with lime and cilantro.
