Tomato Basil Soup (With Rice)

broth 2 cups

Black pepper to taste
cream (optional) 1/4 cup
basil 1 cup
cooked rice 1 cup
Method
1 SAUTÉSauté onion in olive oil 8 minutes; add garlic 30 seconds.
2 ADDAdd tomatoes and broth; simmer 20 minutes.
3 BLENDBlend smooth; stir in basil and cream if using.
4 STIRStir in cooked rice before serving.
5 SEASONSeason to taste.
