Lasagna Soup
If storing leftovers, cook noodles separately so they don't soak up all the broth.

onion, diced 1
garlic, minced 3 cloves
ground beef (or Italian sausage) 1 lb
salt 1 tsp
Italian seasoning 1 tsp
tomato paste 2 tbsp
crushed tomatoes 1 can / (28 oz)
broth (beef or chicken) 4 cups
water 2 cups
lasagna noodles, broken into pieces 8 oz
ricotta 1 cup
grated Parmesan 1/2 cup
shredded mozzarella 2 cups
Fresh basil or parsley, to serve to taste
Method
1 SAUTÉSauté onion in olive oil 5 minutes; add garlic 30 seconds.
2 BROWNBrown beef; season with salt and Italian seasoning; stir in tomato paste 1 minute.
3 ADDAdd crushed tomatoes, broth, and water; bring to a simmer.
4 ADDAdd noodles; cook until tender, 10–12 minutes, stirring occasionally.
5 SERVEServe topped with ricotta, mozzarella, and Parmesan; finish with herbs.

  • 2 cups water
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta
  • 1/2 cup grated Parmesan
  • 2 cups shredded mozzarella
  • to taste Fresh basil or parsley, to serve

Method

  2. Brown beef; season with salt and Italian seasoning; stir in tomato paste 1 minute.
  3. Add crushed tomatoes, broth, and water; bring to a simmer.

  5. Serve topped with ricotta, mozzarella, and Parmesan; finish with herbs.
