Peanut Butter Cookies (Salted Caramel)

(113g) butter, softened 1/2 cup
(120g) peanut butter 1/2 cup
(100g) granulated sugar 1/2 cup
(100g) brown sugar 1/2 cup
egg 1
vanilla extract 1 tsp
(160g) all-purpose flour 1 1/4 cups
baking soda 1/2 tsp
salt 1/2 tsp
caramel bits 1 cup
Flaky salt, for finishing to taste
Method
1 HEATHeat oven to 350°F. Line baking sheets with parchment.
2 CREAMCream butter, peanut butter, and sugars.
3 BEATBeat in egg and vanilla.
4 MIXMix in flour, baking soda, and salt.
5 FOLDFold in caramel bits; sprinkle a pinch of flaky salt after baking.
6 SCOOPScoop balls; press with a fork to make a crosshatch.
7 BAKEBake 10–11 minutes; cool 5 minutes on the sheet.

  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup caramel bits
  • to taste Flaky salt, for finishing

Method

  1. Heat oven to 350°F. Line baking sheets with parchment.
  2. Cream butter, peanut butter, and sugars.
  3. Beat in egg and vanilla.
  4. Mix in flour, baking soda, and salt.
  5. Fold in caramel bits; sprinkle a pinch of flaky salt after baking.
  6. Scoop balls; press with a fork to make a crosshatch.
  7. Bake 10–11 minutes; cool 5 minutes on the sheet.
