Spinach Borani
A cool spinach-yogurt dip that works well with flatbread or grilled meats.

Ingredients

olive oil 1 tbsp
garlic, minced 2 cloves
spinach 10 oz
Greek yogurt 1 cup
dried mint or 2 tbsp fresh mint 1 tbsp
kosher salt 1/2 tsp
black pepper to taste
Method
1 Heat the olive oil and gently cook the garlic for 30 seconds.
2 Add the spinach and cook until wilted. Cool slightly and squeeze out excess moisture.
3 Chop the spinach and mix with the yogurt, mint, salt, and pepper.
4 Chill or serve at room temperature.

Notes

Squeezing out the spinach keeps the dip thick instead of watery.
