Spinach Borani
A cool spinach-yogurt dip that works well with flatbread or grilled meats.
Ingredients
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 10 oz spinach
- 1 cup Greek yogurt
- 1 tbsp dried mint or 2 tbsp fresh mint
- 1/2 tsp kosher salt
- to taste black pepper
Method
- Heat the olive oil and gently cook the garlic for 30 seconds.
- Add the spinach and cook until wilted. Cool slightly and squeeze out excess moisture.
- Chop the spinach and mix with the yogurt, mint, salt, and pepper.
- Chill or serve at room temperature.
Notes
Squeezing out the spinach keeps the dip thick instead of watery.
