Chili Lime Roasted Sweet Potatoes
Roasting at high heat caramelizes edges for better flavor.
Ingredients
- 1.5 lb sweet potatoes, cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1 tsp chili powder
- to taste Juice of 1 lime
- 1/2 tsp cumin
Method
- Heat oven to 425°F. Line a sheet pan for easy cleanup.
- Toss with oil, salt, chili powder, and cumin.
- Spread sweet potatoes on the pan in a single layer.
- Roast for 30–36 minutes, tossing once, until browned and tender.
- Roast at 425°F until browned; finish with lime juice.
