Lemon Herb Couscous
A delicious lemon herb couscous recipe
Ingredients
- 1 cup couscous
- 1 cup broth or water
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp chopped parsley or mint
Method
- Bring broth and salt to a boil; stir in couscous and olive oil; cover and remove from heat.
- Let stand 5 minutes; fluff with a fork.
- Stir in lemon juice, zest, and herbs.
