Chile con Queso
A silky stovetop queso with real cheese and green chile flavor.

butter 1 tbsp
small onion, finely diced 1
jalapeño, minced 1
garlic, minced 1 clove
all-purpose flour 1 tbsp
milk 1 cup
cream cheese 4 oz
diced green chiles 1 (4 oz) can
kosher salt 1/2 tsp
white cheddar or Monterey Jack, shredded 8 oz
Method
1 Melt the butter and cook the onion and jalapeño until softened.
2 Add the garlic and cook 30 seconds, then stir in the flour and cook 1 minute.
3 Whisk in the milk and simmer until slightly thickened.
4 Lower the heat and stir in the shredded cheese and cream cheese until smooth.
5 Stir in the green chiles and salt and serve warm.

  • 4 oz cream cheese
  • 1 (4 oz) can diced green chiles
  • 1/2 tsp kosher salt
  • 8 oz white cheddar or Monterey Jack, shredded

Method

  1. Melt the butter and cook the onion and jalapeño until softened.
  2. Add the garlic and cook 30 seconds, then stir in the flour and cook 1 minute.

  4. Lower the heat and stir in the shredded cheese and cream cheese until smooth.
  5. Stir in the green chiles and salt and serve warm.

Notes

Keep the heat low once the cheese goes in so the dip stays smooth.
