Chile con Queso
A silky stovetop queso with real cheese and green chile flavor.
Ingredients
- 1 tbsp butter
- 1 small onion, finely diced
- 1 jalapeño, minced
- 1 clove garlic, minced
- 1 tbsp all-purpose flour
- 1 cup milk
- 4 oz cream cheese
- 1 (4 oz) can diced green chiles
- 1/2 tsp kosher salt
- 8 oz white cheddar or Monterey Jack, shredded
Method
- Melt the butter and cook the onion and jalapeño until softened.
- Add the garlic and cook 30 seconds, then stir in the flour and cook 1 minute.
- Whisk in the milk and simmer until slightly thickened.
- Lower the heat and stir in the shredded cheese and cream cheese until smooth.
- Stir in the green chiles and salt and serve warm.
Notes
Keep the heat low once the cheese goes in so the dip stays smooth.
