Banana Bread (Cinnamon Swirl)
Use very ripe bananas with lots of brown spots for best flavor.

ripe bananas, mashed 3
melted butter (or oil) 1/2 cup
sugar 3/4 cup
eggs 2
vanilla extract 1 tsp
all-purpose flour 1 1/2 cups
baking soda 1 tsp
salt 1/2 tsp
cinnamon (optional) 1 tsp
Swirl: 1/4 cup brown sugar + 1 tsp cinnamon to taste
Method
1 HEATHeat oven to 350°F. Grease a loaf pan and line with parchment if desired.
2 WHISKWhisk mashed bananas, melted butter, sugar, eggs, and vanilla.
3 STIRStir in flour, baking soda, salt (and cinnamon) just until combined.
4 POURPour into pan and bake 50–60 minutes until a toothpick comes out mostly clean.
5 LAYERLayer batter with cinnamon sugar and swirl with a knife.
6 COOLCool 10 minutes in pan, then turn out to cool completely.

Method
