Banana Bread (Cinnamon Swirl)

Ingredients

• 3 ripe bananas, mashed
• 1/2 cup melted butter (or oil)
• 3/4 cup sugar
• 2 eggs
• 1 tsp vanilla extract
• 1 1/2 cups all-purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp cinnamon (optional)
• to taste Swirl: 1/4 cup brown sugar + 1 tsp cinnamon

Method

1. Heat oven to 350°F. Grease a loaf pan and line with parchment if desired.
2. Whisk mashed bananas, melted butter, sugar, eggs, and vanilla.
3. Stir in flour, baking soda, salt (and cinnamon) just until combined.
4. Pour into pan and bake 50–60 minutes until a toothpick comes out mostly clean.
5. Layer batter with cinnamon sugar and swirl with a knife.
6. Cool 10 minutes in pan, then turn out to cool completely.

Notes

Use very ripe bananas with lots of brown spots for best flavor.
