Carrot Cake (Easy)
Cool cakes fully before frosting to prevent melting.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 eggs
- 1 cup oil
- 2 tsp vanilla
- 3 cups grated carrots
- 1/2 cup chopped walnuts (optional)
Method
- Heat oven to 350°F. Grease two 8-inch pans or one 9x13 pan.
- Whisk dry ingredients.
- Whisk eggs, oil, and vanilla; stir into dry ingredients.
- Fold in carrots (and walnuts).
- Bake 30–35 minutes until a toothpick comes out clean.
