Chewy Blondies (Pecan)
Do not overbake; blondies firm up as they cool.
Ingredients
- 1/2 cup (113g) butter, melted
- 1 cup (200g) brown sugar
- 1 egg + 1 yolk
- 1 tsp vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup white chocolate chips (optional)
- 1 cup chopped pecans
Method
- Heat oven to 350°F. Line an 8x8-inch pan with parchment.
- Whisk melted butter and brown sugar.
- Whisk in egg, yolk, and vanilla.
- Stir in flour, baking powder, and salt just until combined.
- Fold in chips if using.
- Fold in pecans.
- Bake 20–25 minutes until golden. Cool completely before slicing.
