Lemon Loaf

Ingredients

• 1 1/2 cups all-purpose flour
• 1 tsp baking powder
• 1/2 tsp salt
• 1 cup sugar
• 2 eggs
• 1/2 cup milk
• 1/2 cup melted butter
• 2 tbsp lemon zest
• 1/4 cup lemon juice
• to taste Glaze: 1 cup powdered sugar + 2 tbsp lemon juice

Method

1. Heat oven to 350°F. Grease a loaf pan and line with parchment.
2. Whisk flour, baking powder, and salt.
3. Whisk sugar and eggs until pale; whisk in milk, butter, zest, and lemon juice.
4. Fold in dry ingredients just until combined.
5. Bake 45–55 minutes until a toothpick comes out clean.
6. Whisk glaze and drizzle over cooled loaf.

Notes

Zest provides most of the lemon aroma—don't skip it.
