Lemon Loaf (Poppy Seed)
Zest provides most of the lemon aroma—don't skip it.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/2 cup melted butter
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- to taste Glaze: 1 cup powdered sugar + 2 tbsp lemon juice
- 2 tbsp poppy seeds
Method
- Heat oven to 350°F. Grease a loaf pan and line with parchment.
- Whisk flour, baking powder, and salt.
- Whisk sugar and eggs until pale; whisk in milk, butter, zest, and lemon juice.
- Fold in dry ingredients just until combined.
- Bake 45–55 minutes until a toothpick comes out clean.
- Stir poppy seeds into batter with dry ingredients.
- Whisk glaze and drizzle over cooled loaf.
