Oatmeal Raisin Cookies (Chocolate Chunk)
Soak raisins in hot water 10 minutes, then drain, for plumper cookies.
Ingredients
- 1 cup (226g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 1/2 cup (100g) granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 cups rolled oats
- 1 cup raisins
- 2 cups chocolate chunks
Method
- Heat oven to 350°F. Line baking sheets with parchment.
- Cream butter and sugars until fluffy; beat in eggs and vanilla.
- Mix in flour, baking soda, cinnamon, and salt.
- Use chunks for bigger pockets of chocolate.
- Stir in oats and raisins.
- Scoop and bake 10–12 minutes; cool 5 minutes on the sheet.
