Pumpkin Bread
Pumpkin bread stays moist—wrap tightly after cooling.
Ingredients
- 1 1/2 cups pumpkin puree
- 1/2 cup oil
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 1/2 tsp pumpkin spice
- 1/2 tsp salt
Method
- Heat oven to 350°F. Grease a loaf pan and line with parchment if desired.
- Whisk pumpkin, oil, sugar, eggs, and vanilla.
- Whisk flour, baking soda, baking powder, spice, and salt; fold into wet ingredients.
- Bake 50–60 minutes until a toothpick comes out with a few moist crumbs.
- Cool before slicing.
