Shortbread Cookies (Double Chocolate)

(226g) butter, softened 1 cup
(60g) powdered sugar 1/2 cup
(295g) all-purpose flour 2 1/3 cups
salt 1/2 tsp
vanilla (optional) 1 tsp
cocoa powder 1/3 cup
Reduce flour by 1/3 cup to taste
Method
1 HEATHeat oven to 325°F. Line baking sheets with parchment.
2 CREAMCream butter and powdered sugar; add vanilla if using.
3 MIXMix in flour and salt until a dough forms.
4 WHISKWhisk cocoa into dry ingredients; reduce flour accordingly.
5 ROLLRoll to 1/4-inch thick and cut shapes (or slice a log).
6 BAKEBake 16–20 minutes until just barely golden at edges.
