Zucchini Bread
Squeezing excess water from zucchini helps prevent a gummy loaf.
Ingredients
- 2 cups grated zucchini (squeeze out excess moisture)
- 1/2 cup melted butter (or neutral oil)
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- to taste Optional: 1/2 cup chopped walnuts or chocolate chips
Method
- Heat oven to 350°F. Grease a loaf pan and line with parchment if desired.
- Whisk butter, sugar, eggs, and vanilla until smooth.
- Stir in grated zucchini.
- Whisk flour, baking soda, baking powder, cinnamon, and salt; fold into wet ingredients just until combined.
- Fold in walnuts or chocolate chips if using.
- Bake 50–60 minutes until a toothpick comes out with a few moist crumbs. Cool 10 minutes, then turn out to cool fully.
