Baked Enchiladas (Chicken)
Casseroles are great for meal prep—cool, then refrigerate for up to 4 days.
Ingredients
- 2 cups cooked shredded chicken
- 2 cups enchilada sauce
- 8 tortillas
- 2 cups shredded cheese
- 1/2 cup diced onion
- to taste Cilantro (optional)
Method
- Heat oven to 375°F.
- Spread a thin layer of sauce in a baking dish.
- Fill tortillas with chicken and some cheese; roll and place seam-side down.
- Top with remaining sauce and cheese; bake 20–25 minutes until bubbly.
- Top with onion and cilantro.
