Cajun Jambalaya (Easy)
For rice dishes, rinse rice for fluffier texture unless making risotto.
Ingredients
- 1 tbsp oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic
- 12 oz andouille sausage, sliced
- 1 tsp Cajun seasoning
- 1 can diced tomatoes
- 2 cups rice
- 4 cups broth
- 1 tsp salt
Method
- Sauté onion, pepper, celery in oil 6 minutes; add garlic 30 seconds.
- Brown sausage; stir in Cajun seasoning.
- Add tomatoes, rice, broth, and salt; simmer covered 20–25 minutes until rice is tender.
- Rest 5 minutes and serve.
