Chicken Biryani (Simplified)
For rice dishes, rinse rice for fluffier texture unless making risotto.
Ingredients
- 2 tbsp oil
- 1 onion, sliced
- 1.5 lb chicken thighs, cubed
- 1 tsp salt
- 2 tsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 2 cups basmati rice
- 4 cups broth
- 1/2 cup yogurt
- to taste Cilantro
Method
- Sauté onion in oil until golden, 8 minutes.
- Add chicken, salt, and spices; cook 5 minutes.
- Stir in rice and broth; cover and simmer 18–20 minutes.
- Stir in yogurt; rest 5 minutes; top with cilantro.
