Chicken Curry (Quick)
Curries thicken as they cool; thin with a splash of broth if needed.
Ingredients
- 1 tbsp oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp curry powder
- 1 tsp salt
- 1.5 lb chicken thighs, cubed
- 1 can / (1/4 oz) crushed tomatoes
- 1 can coconut milk
- 1 tbsp lemon juice
- to taste Cilantro
- to taste Rice for serving
Method
- Sauté onion in oil 6 minutes; add garlic and ginger 30 seconds.
- Stir in curry powder and salt 30 seconds.
- Add chicken; cook 4 minutes to lightly brown.
- Add tomatoes and coconut milk; simmer 15 minutes until chicken is cooked.
- Finish with lemon and cilantro; serve with rice.
