Chicken Curry (Quick)

onion, diced 1
garlic, minced 3 cloves
grated ginger 1 tbsp
curry powder 2 tbsp
salt 1 tsp
chicken thighs, cubed 1.5 lb
crushed tomatoes 1 can / (1/4 oz)
coconut milk 1 can
lemon juice 1 tbsp
Cilantro to taste
Rice for serving to taste
Method
1 SAUTÉSauté onion in oil 6 minutes; add garlic and ginger 30 seconds.
2 STIRStir in curry powder and salt 30 seconds.
3 ADDAdd chicken; cook 4 minutes to lightly brown.
4 ADDAdd tomatoes and coconut milk; simmer 15 minutes until chicken is cooked.
5 FINISHFinish with lemon and cilantro; serve with rice.
